I want to use a midi and keyboard to enter music or scan it in to orchestrate and make CDs of music for accompaning singers/dancers.

Any kind of Apple, they come with O.K. software called garageband. It will work with midi, guitars, wind instruments etc., but you can not cut out very short parts. So you can get Logic Express, it is harder to use but much better.
If you have a lot of money you can use Pro Tools. Most professional musicians use this but it can be extremely expensive. (think up to $10,000 for everything). Getting a great mic is important. Enjoy.
