Sibelius Music Notation

I write music. I use Finale 2007, and buy the upgrades as they come out. I was hoping that Jeremy Soule writes his music on a notation program similar to Sibelius or Finale due to my familiarity with them. I have looked into the Midi programs, and maybe I'm not understanding anything, but I can't find any staffs to write the music into. For example, cakewalk music pro. ......What the hell? No place to write the music. Lol, anyways, I was just curious as to what Jeremy Soule writes on.Thanks in advance for any anwers
