How can I, and what do i need to record instruments on seperate tracks simultaneously?

Take for instance a three piece band: bass, giutar, vocals, All playing at the same time but recorded on different tracks to adjust track volumes and effects.

Does a usb mixer give the abilty to assign seperate instuments to seperate tracks? Anything may help (I currently use Acid 6 pro which has the capability but am switching to logic 7 soon)

When I was recording I use acid pro4 and cakewalk ,cakewalk is hard but its what the pro studios use - diffrent version, but same.
